Our Subscription Box began as a simple idea—something Richard originally put together for his family and a few close friends. It was a way to share what we were thinking about each season. But as time went on, more and more people asked for it, and we got more and more curious. We traveled to meet new collaborators and learn more about flavors and scents in different parts of the world, unencumbered by the pressures of scale or margins associated with other parts of the business machine.
Last year—in a turning point—we traveled to collaborate with farmers in Hawai‘i, Japan, and the Kingdom of Bhutan. But this season, we have a love letter to (and from) our neighbors in Mexico. But how do you fit the flavors of an entire country into one box? You can’t. So instead, we started with our favorite place: Mestiza de Indias, a 500-acre project in the Yucatán Peninsula run by my friend Gonzalo Samaranch. We’ve been working with him to save the endangered Melipona bee, and his farm was the perfect jumping-off point.
